One-Pot Tomato Basil and White Bean Stew

Ingredients
- 2 tbsp olive oil
- 1 large, diced yellow onion
- 3 cloves, minced garlic
- 1 (28 oz) can crushed tomatoes
- 1 (15 oz) can, drained and rinsed cannellini beans
- 1 cup vegetable broth
- 1 tsp dried oregano
- 1/2 tsp red pepper flakes
- 1 cup, chopped fresh basil
- to taste salt
- to taste black pepper
- 4 cups cooked quinoa
Instructions
- Step 1: Heat 2 tbsp olive oil in a large pot over medium heat. Add 1 large diced yellow onion and cook for 5 minutes until softened and translucent, stirring occasionally.
- Step 2: Add 3 minced garlic cloves and cook for 1 minute until fragrant, being careful not to burn.
- Step 3: Stir in 1 (28 oz) can crushed tomatoes, 1 (15 oz) can drained cannellini beans, 1 cup vegetable broth, 1 tsp dried oregano, and 1/2 tsp red pepper flakes. Bring to a simmer and cook for 15 minutes, stirring occasionally.
- Step 4: Stir in 1 cup chopped fresh basil and season with salt and black pepper to taste. Simmer for an additional 5 minutes.
- Step 5: Serve the stew over 4 cups cooked quinoa.
