One-Pot Tomato Basil and White Bean Stew

  1. Step 1: Heat 2 tbsp olive oil in a large pot over medium heat. Add 1 large diced yellow onion and cook for 5 minutes until softened and translucent, stirring occasionally.
  2. Step 2: Add 3 minced garlic cloves and cook for 1 minute until fragrant, being careful not to burn.
  3. Step 3: Stir in 1 (28 oz) can crushed tomatoes, 1 (15 oz) can drained cannellini beans, 1 cup vegetable broth, 1 tsp dried oregano, and 1/2 tsp red pepper flakes. Bring to a simmer and cook for 15 minutes, stirring occasionally.
  4. Step 4: Stir in 1 cup chopped fresh basil and season with salt and black pepper to taste. Simmer for an additional 5 minutes.
  5. Step 5: Serve the stew over 4 cups cooked quinoa.
