Oshkosh Lemon Thyme Chicken

Ingredients
- 4 boneless, skinless (about 6 ounces each) chicken breasts
- 2 tablespoons olive oil
- 1, zested and juiced lemon
- 2 tablespoons fresh thyme leaves
- 2, minced garlic cloves
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup chicken broth
Instructions
- Step 1: Preheat oven to 400°F. Pat chicken dry and season both sides with 1/2 teaspoon salt and 1/4 teaspoon black pepper.
- Step 2: Mix 2 tablespoons olive oil, 1 lemon zested and juiced, 2 tablespoons fresh thyme leaves, and 2 minced garlic cloves in a bowl. Brush mixture evenly over chicken.
- Step 3: Place chicken in a baking dish and pour 1/4 cup chicken broth around the edges. Bake for 22-25 minutes until internal temperature reaches 165°F and juices run clear, basting once after 12 minutes.
