  1. Step 1: In a large bowl, combine 2 large peeled and grated russet potatoes (about 2 cups), 1/4 cup finely chopped yellow onion, 2 large eggs, 1/4 cup all-purpose flour, 1/2 tsp salt, and 1/4 tsp black pepper. Mix until evenly incorporated.
  2. Step 2: Heat 1 tbsp vegetable oil in a large non-stick skillet over medium heat. Add 1/4 cup of the potato mixture to form a patty, pressing down firmly. Cook for 4-5 minutes until golden brown on the bottom, then flip and cook for another 4-5 minutes until golden on the other side.
  3. Step 3: Repeat with remaining mixture, adding more oil as needed. Drain cooked pancakes on paper towels.
  4. Step 4: Serve hot, topped with 1/2 cup chopped smoked bacon.
