Pan-Fried Shrimp Cakes with Lemon Dill

Ingredients
- 12 ounces shrimp
- 1 teaspoon lemon zest
- 2 tablespoons, chopped fresh dill
- 1 clove, minced garlic
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- 1 tablespoon water
Instructions
- Step 1: Finely chop 12 ounces of shrimp until mostly smooth, then transfer to a bowl.
- Step 2: Add 1 teaspoon of lemon zest, 2 tablespoons of chopped dill, 1 minced garlic clove, 1/4 teaspoon salt, and 1/8 teaspoon black pepper to the shrimp. Mix until fully combined.
- Step 3: Form mixture into 4 equal patties (about 3 inches wide) and refrigerate for 10 minutes.
- Step 4: Heat 2 tablespoons of olive oil in a skillet over medium heat until hot.
- Step 5: Add the shrimp patties and cook for 3 minutes per side, until golden brown and cooked through.
- Step 6: While patties cook, whisk together 1 tablespoon of lemon juice and 1 tablespoon of water in a small bowl. Stir in 1 tablespoon of additional chopped dill.
- Step 7: Remove patties from skillet, drizzle with lemon-dill sauce, and serve immediately.
