Pan-Fried Smashed Potato Hash with Bacon and Chives

Ingredients
- 1 lb Potatoes
- 4 oz Bacon
- 1/2 cup Onion
- 2 tbsp Chives
- 1 tbsp Olive oil
- 1/2 tsp Salt
- 1/4 tsp Black pepper
Instructions
- Step 1: Peel and dice the potatoes into 1/2-inch cubes. Place in a pot, cover with cold water, and bring to a boil. Cook for 12-15 minutes until tender when pierced with a fork. Drain thoroughly and return to the pot.
- Step 2: Add 1 tbsp olive oil, 1/2 tsp salt, and 1/4 tsp black pepper to the potatoes. Use a potato masher to smash them until mostly flat but still slightly textured.
- Step 3: Heat a large skillet over medium heat. Add the diced bacon and cook until crisp, about 5 minutes. Remove bacon with a slotted spoon and set aside.
- Step 4: In the same skillet, add the diced onion and cook for 3 minutes until softened. Add the smashed potatoes and cook for 5 minutes, pressing down gently with a spatula to form a flat layer, until golden brown on the bottom.
- Step 5: Stir in the cooked bacon and 2 tbsp chopped chives. Cook for 1 minute more to heat through. Serve immediately.
