Pan-Fried Tostones with Mojo Sauce

Ingredients
- 2 medium, peeled and sliced green plantains
- 2 tablespoons all-purpose flour
- 1 cup, for frying olive oil
- 3 cloves, minced garlic
- 3 tablespoons lime juice
- 1/4 teaspoon red pepper flakes
Instructions
- Step 1: Slice 2 peeled green plantains into 1/2-inch thick rounds, dredge in 2 tablespoons flour, and pat dry.
- Step 2: Heat 1 cup olive oil in a skillet to 350°F, fry plantain slices for 3 minutes until golden, then flip and fry another 3 minutes until crisp. Drain on paper towels.
- Step 3: In a bowl, mix 3 minced garlic cloves, 3 tablespoons lime juice, and 1/4 teaspoon red pepper flakes, then let sit for 10 minutes to meld flavors.
- Step 4: Serve tostones warm with the mojo sauce spooned over the top.
