Ingredients
- 12 ounces Cod fillets
- 1 cup Green beans
- 2 tablespoons Butter
- 1/2, juiced and zested Lemon
- 2 cloves, minced Garlic
- 1 tablespoon Olive oil
- 1 teaspoon, chopped Fresh dill
- 1/4 teaspoon Salt
- 1/4 teaspoon Black pepper
Instructions
- Step 1: Pat cod fillets dry with paper towels and season both sides with 1/4 teaspoon salt and 1/4 teaspoon black pepper. Heat 1 tablespoon olive oil in a large skillet over medium-high heat until shimmering, about 1 minute.
- Step 2: Place cod in the skillet and cook undisturbed for 3-4 minutes until golden brown on the bottom. Flip and cook another 3-4 minutes until the fish flakes easily with a fork.
- Step 3: While cod cooks, steam green beans in a covered pot with 1/4 cup water for 4-5 minutes until tender-crisp. In a small bowl, combine 2 tablespoons butter, 1/2 lemon juice, 2 minced garlic cloves, and lemon zest. Remove skillet from heat, add the lemon-butter mixture, and swirl until melted. Stir in 1 teaspoon chopped fresh dill. Place cod on plates, top with green beans, and drizzle with the lemon-garlic butter sauce.
