Pan-Seared Garlic-Parsley Chicken with Lemon-Dijon Sauce

Ingredients
- 4 (6 oz each) chicken breasts
- 2 tbsp olive oil
- 4 cloves garlic
- 1/4 cup fresh parsley
- 2 tbsp lemon juice
- 1 tbsp Dijon mustard
- 1/4 cup chicken broth
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Step 1: Pat chicken breasts dry with paper towels. Season both sides with 1/2 tsp salt and 1/4 tsp black pepper. Heat 1 tbsp olive oil in a large skillet over medium-high heat until shimmering.
- Step 2: Add chicken breasts and cook for 5-6 minutes per side until golden brown and internal temperature reaches 165°F. Transfer to a plate and tent loosely with foil.
- Step 3: Add remaining 1 tbsp olive oil to the skillet. Sauté 4 minced garlic cloves for 30 seconds until fragrant but not browned. Stir in 1/4 cup chopped fresh parsley, 2 tbsp lemon juice, 1 tbsp Dijon mustard, and 1/4 cup chicken broth. Simmer for 2 minutes until slightly thickened, then pour over chicken and serve immediately.
