Pan-Seared Lemon Herb Cod with Asparagus

  1. Step 1: Season cod fillets on both sides with 1/2 tsp salt, 1/4 tsp black pepper, and 1/2 tsp garlic powder. Place skin-side down in a cold non-stick skillet.
  2. Step 2: Heat 1 tbsp olive oil in the skillet over medium heat until shimmering. Cook cod skin-side down for 4-5 minutes until golden and crispy. Flip and cook 3-4 minutes more until fish flakes easily.
  3. Step 3: Remove cod and set aside. Add asparagus to the same skillet and cook for 5-6 minutes, stirring occasionally, until tender-crisp.
  4. Step 4: Return cod to skillet with 1 tbsp fresh thyme, 1/2 lemon sliced, and 1 tbsp butter. Cook for 1 minute, then squeeze 1 tbsp lemon juice over top. Toss to coat and serve immediately.
