Ingredients
- 2 (1-inch thick) center-cut pork chops
- 1 tbsp extra-virgin olive oil
- 2 tbsp unsalted butter
- 1 tsp finely chopped fresh rosemary
- 2 cloves minced garlic
- 1/2 tsp sea salt
- 1/4 tsp black pepper
Instructions
- Step 1: Pat pork chops dry with paper towels, then season both sides with 1/2 tsp sea salt and 1/4 tsp black pepper.
- Step 2: Heat 1 tbsp olive oil in a large skillet over medium-high heat until shimmering, about 1 minute.
- Step 3: Sear pork chops for 4-5 minutes per side until golden brown and internal temperature reaches 145°F, then transfer to a plate and tent loosely with foil.
- Step 4: Reduce heat to medium, add 2 tbsp butter and 2 minced garlic cloves to the skillet, stirring until butter melts and garlic is fragrant, about 30 seconds.
- Step 5: Stir in 1 tsp chopped rosemary, return pork chops to skillet, and cook for 1 minute to coat, basting with butter mixture.
