Pan-Seared Salmon with Avocado Cucumber Salsa

Ingredients
- 4 (about 6 oz each) salmon fillets
- 1 tbsp olive oil
- 1/2 lemon
- 1/4 tsp sea salt
- 1/4 tsp black pepper
- 1 avocado
- 1/2 cucumber
- 2 tbsp, finely diced red onion
- 1 tbsp, chopped fresh cilantro
- 1 tbsp lime juice
Instructions
- Step 1: Pat salmon fillets dry with paper towels, then season evenly with 1/4 tsp sea salt and 1/4 tsp black pepper.
- Step 2: Heat 1/2 tbsp olive oil in a large skillet over medium-high heat until shimmering. Place salmon skin-side down and cook for 5-6 minutes until skin is golden and crispy.
- Step 3: While salmon cooks, dice 1 avocado and 1/2 cucumber. In a bowl, combine diced avocado, 1/2 cucumber, 2 tbsp diced red onion, 1 tbsp chopped cilantro, and 1 tbsp lime juice. Toss gently to coat.
- Step 4: Flip salmon and cook for 2 more minutes until internal temperature reaches 145°F (63°C). Serve salmon topped with avocado cucumber salsa.
