Pan-Seared Salmon with Fresh Lemon and Dill

Ingredients
- 1 lb salmon fillets
- 2 tbsp avocado oil
- 1, zested and juiced lemon
- 2 tbsp, chopped fresh dill
- 1 lb, halved fingerling potatoes
- 1 tsp sea salt
- 1/2 tsp black pepper
Instructions
- Step 1: Preheat oven to 400°F. Toss 1 lb halved fingerling potatoes with 1 tbsp avocado oil, 1/2 tsp salt, and 1/4 tsp black pepper on a baking sheet.
- Step 2: Roast potatoes for 20 minutes until golden and tender, then set aside.
- Step 3: Heat 1 tbsp avocado oil in a skillet over medium-high heat. Season 1 lb salmon fillets with 1/2 tsp salt and 1/4 tsp black pepper.
- Step 4: Place salmon skin-side down in skillet and cook for 5 minutes until skin is crisp, then flip and cook 3 minutes more until opaque.
- Step 5: Remove salmon from skillet, then add zested lemon, 1 tbsp lemon juice, and 2 tbsp chopped dill to the pan. Sauté for 1 minute until fragrant.
- Step 6: Drizzle lemon-dill sauce over salmon and serve with roasted potatoes.
