  1. Step 1: Preheat oven to 400°F. Toss 1 lb halved fingerling potatoes with 1 tbsp avocado oil, 1/2 tsp salt, and 1/4 tsp black pepper on a baking sheet.
  2. Step 2: Roast potatoes for 20 minutes until golden and tender, then set aside.
  3. Step 3: Heat 1 tbsp avocado oil in a skillet over medium-high heat. Season 1 lb salmon fillets with 1/2 tsp salt and 1/4 tsp black pepper.
  4. Step 4: Place salmon skin-side down in skillet and cook for 5 minutes until skin is crisp, then flip and cook 3 minutes more until opaque.
  5. Step 5: Remove salmon from skillet, then add zested lemon, 1 tbsp lemon juice, and 2 tbsp chopped dill to the pan. Sauté for 1 minute until fragrant.
  6. Step 6: Drizzle lemon-dill sauce over salmon and serve with roasted potatoes.
