Serves 2.
Ingredients
- 2 (6 ounces each) salmon fillets
- 2 tablespoons olive oil
- 1/2 lemon
- 2 tablespoons capers
- 1 clove, minced garlic
- 1 teaspoon, chopped fresh dill
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
Instructions
- Step 1: Pat salmon dry with paper towels and season both sides with salt and pepper. Heat 1 tablespoon olive oil in a skillet over medium-high heat until shimmering.
- Step 2: Place salmon skin-side down in the skillet. Cook undisturbed for 4-5 minutes until skin is crispy and golden. Flip carefully and cook for another 3-4 minutes until just opaque in the center.
- Step 3: Remove salmon from skillet and set aside. Add remaining 1 tablespoon olive oil to the pan, then add minced garlic and capers. Sauté for 1 minute until fragrant.
- Step 4: Squeeze juice from 1/2 lemon over the pan, add chopped dill, and stir to combine. Return salmon to the pan, spooning sauce over top. Cook for 1 more minute to heat through.
