Pan-Seared Salmon with Lemon-Dill Crust and Roasted Asparagus

- 4 (6 oz each) salmon fillets
- 2 tbsp finely chopped fresh dill
- 1 lemon lemon zest
- 2 tbsp olive oil
- 12 oz trimmed asparagus
- 2 cloves minced garlic
- 1/2 tsp sea salt
- 1/4 tsp black pepper
Instructions
- Step 1: Preheat oven to 400°F (200°C). Place asparagus in a single layer on a parchment-lined baking sheet, drizzle with 1 tbsp olive oil, and sprinkle with 1/4 tsp salt and 1/8 tsp pepper. Toss to coat evenly.
- Step 2: In a small bowl, combine 1 tbsp olive oil, lemon zest, 1 tbsp dill, 1/4 tsp salt, and 1/8 tsp pepper. Pat salmon fillets dry with paper towels, then spread the herb mixture evenly over both sides.
- Step 3: Roast asparagus for 12 minutes until crisp-tender, then add salmon to the baking sheet. Bake 12-14 minutes until salmon flakes easily with a fork and reaches 145°F (63°C) internally.
- Step 4: While salmon cooks, heat 1 tbsp olive oil in a small skillet over medium heat. Add minced garlic and sauté for 1 minute until fragrant but not browned. Drizzle over cooked salmon before serving.
