Pan-Seared Salmon with Lemon-Glazed Shallots and Dill

Ingredients
- 4 (6 oz each) salmon fillets
- 2 tbsp olive oil
- 1 cup, sliced shallots
- 2 tbsp lemon juice
- 1 tbsp honey
- 1/2 tsp dried thyme
- 2 tbsp, chopped fresh dill
Instructions
- Step 1: Pat 4 salmon fillets dry with paper towels and season with salt and pepper. Heat 1 tbsp olive oil in a large skillet over medium-high heat until shimmering.
- Step 2: Add salmon skin-side down (if skin-on) and cook for 5-6 minutes until golden brown, then flip and cook for 2-3 minutes more until cooked through.
- Step 3: Remove salmon and set aside. Add remaining 1 tbsp olive oil to the skillet, then add 1 cup sliced shallots and cook for 5 minutes until softened and lightly golden.
- Step 4: Stir in 2 tbsp lemon juice, 1 tbsp honey, and 1/2 tsp dried thyme. Cook for 2 minutes until shallots are glazed and sauce thickens slightly.
- Step 5: Return salmon to skillet, spooning sauce over top, and cook for 1 minute to reheat.
- Step 6: Sprinkle with 2 tbsp chopped fresh dill and serve immediately.
