  1. Step 1: Pat scallops dry with paper towels, then season with 1/4 teaspoon salt and 1/8 teaspoon black pepper. Heat 1 tablespoon olive oil in a large skillet over medium-high heat until hot but not smoking.
  2. Step 2: Add scallops and cook undisturbed for 2-3 minutes until golden brown. Flip and cook for another 2-3 minutes until opaque and just cooked through (internal temperature 120°F/49°C).
  3. Step 3: Add 1 tablespoon butter and 2 minced garlic cloves to the skillet, then squeeze in 1/2 lemon juice. Stir for 1 minute until butter melts and garlic is fragrant. Remove from heat, stir in 1 tablespoon chopped fresh chives, and serve immediately.
