Pan-Seared Shrimp and Tomato Pasta

Ingredients
- 12 oz Shrimp
- 1 cup Cherry tomatoes
- 2 cloves Garlic
- 2 tbsp Olive oil
- 1/2 Lemon
- 8 oz Spaghetti
- 1/2 tsp Salt
- 1/4 tsp Red pepper flakes
- 2 tbsp Fresh parsley
Instructions
- Step 1: Bring a large pot of salted water to a rolling boil. Add 8 oz spaghetti and cook for 8-10 minutes until al dente, then drain and reserve 1/2 cup pasta water.
- Step 2: Heat 2 tbsp olive oil in a large skillet over medium heat. Add 2 minced garlic cloves and 1/4 tsp red pepper flakes, sautéing for 30 seconds until fragrant.
- Step 3: Add 12 oz peeled and deveined shrimp to the skillet and cook for 2-3 minutes per side until pink and opaque.
- Step 4: Add 1 cup halved cherry tomatoes to the skillet and cook for 2 minutes until slightly softened.
- Step 5: Stir in 1/2 lemon zested and 1/2 lemon juiced, then add the drained spaghetti and 1/2 cup reserved pasta water. Toss to coat, adding more pasta water if needed to create a light sauce.
- Step 6: Season with 1/2 tsp salt and 2 tbsp chopped fresh parsley, then serve immediately.
