Pan-Seared Tofu with Ginger and Scallions

Ingredients
- 400 g firm tofu
- 15 g fresh ginger
- 3 scallions
- 30 ml soy sauce
- 15 ml rice wine vinegar
- 5 g granulated sugar
- 15 g cornstarch
- 30 ml vegetable oil
Instructions
- Step 1: Press 400 g firm tofu for 15 minutes to remove excess water, then cut into 1/2-inch thick slices. Toss slices in 15 g cornstarch until evenly coated.
- Step 2: Mince 15 g fresh ginger and chop 3 scallions (separating white and green parts).
- Step 3: Heat 30 ml vegetable oil in a large skillet over medium-high heat. Add tofu slices and cook for 4 minutes per side until golden brown and crispy.
- Step 4: In a small bowl, whisk 30 ml soy sauce, 15 ml rice wine vinegar, and 5 g granulated sugar until dissolved.
- Step 5: Pour sauce into skillet with tofu. Add minced ginger and white parts of scallions. Cook for 2 minutes, stirring constantly, until sauce thickens and coats tofu.
- Step 6: Garnish with green parts of scallions and serve immediately.
