Parmesan-Herb Cauliflower Mash
A creamy, flavorful low-carb alternative to mashed potatoes, made with steamed cauliflower, melted butter, and a hint of fresh herbs for a satisfying side dish.

Ingredients
- 2 cups, florets cauliflower
- 2 tbsp butter
- 1/4 cup, grated parmesan cheese
- 1 tbsp, chopped fresh chives
- 1/4 tsp garlic powder
- 1/4 tsp salt
- 1/8 tsp black pepper
Instructions
- Step 1: Steam 2 cups cauliflower florets in a basket over boiling water for 12-15 minutes until very tender when pierced with a fork.
- Step 2: Drain cauliflower and return to pot. Add 2 tbsp butter and 1/4 tsp salt, then mash with a potato masher until smooth.
- Step 3: Stir in 1/4 cup grated parmesan cheese, 1 tbsp chopped fresh chives, 1/4 tsp garlic powder, and 1/8 tsp black pepper until well combined and heated through.
- Step 4: Taste and adjust seasoning if needed, then serve immediately.
