Instructions
- Step 1: Preheat oven to 375°F (190°C). Roll out puff pastry on a floured surface to 1/8-inch thickness, then transfer to a parchment-lined baking sheet.
- Step 2: In a skillet over medium heat, melt 2 tbsp unsalted butter. Add 1 cup peeled pearl onions and cook for 10 minutes, stirring occasionally, until lightly browned. Stir in 2 tbsp chopped thyme and 1 tbsp dry vermouth, then cook for 2 more minutes until onions are tender and liquid evaporates.
- Step 3: Whisk together 1/4 cup heavy cream, 1 tbsp dry vermouth, 1/4 tsp kosher salt, and 1 lightly beaten egg. Pour over caramelized onions, stirring gently to coat.
- Step 4: Spread onion mixture evenly over puff pastry, leaving a 1-inch border. Fold pastry edges inward, then brush with beaten egg. Bake for 25 minutes until golden and puffed.
- Step 5: Let cool for 10 minutes, then sprinkle with 1 tbsp finely sliced chives before slicing into wedges.
