Pepperoni Mac and Cheese Bites
Bite-sized pockets of creamy macaroni and melted cheese, infused with pepperoni and baked until golden.

Ingredients
- 8 oz elbow macaroni
- 2 tbsp butter
- 2 tbsp all-purpose flour
- 1 cup milk
- 1 cup, shredded cheddar cheese
- 1/2 cup, shredded mozzarella cheese
- 1/2 cup, chopped pepperoni
- 1/4 tsp garlic powder
- 1/4 tsp dried oregano
- 1/4 cup, grated Parmesan cheese
Instructions
- Step 1: Cook 8 oz elbow macaroni in a large pot of salted boiling water for 8 minutes until al dente. Drain and set aside.
- Step 2: In a medium saucepan, melt 2 tbsp butter over medium heat. Whisk in 2 tbsp all-purpose flour and cook for 1 minute until golden.
- Step 3: Gradually whisk in 1 cup milk, then add 1/4 tsp garlic powder and 1/4 tsp dried oregano. Cook for 3-4 minutes, stirring constantly, until thickened.
- Step 4: Stir in 1 cup shredded cheddar cheese and 1/2 cup shredded mozzarella cheese until melted. Remove from heat and stir in drained macaroni and 1/2 cup chopped pepperoni.
- Step 5: Preheat oven to 375°F. Line a baking sheet with parchment paper.
- Step 6: Scoop 1 tablespoon of the mixture and form into a ball. Place on baking sheet. Repeat with remaining mixture.
- Step 7: Sprinkle 1/4 cup grated Parmesan cheese evenly over the top of all bites.
- Step 8: Bake for 15-18 minutes until golden and bubbly.
