Photon-Infused Lemon-Ginger Chicken Skillet

Ingredients
- 2 (6 oz each), boneless and skinless chicken breasts
- 2 tbsp avocado oil
- 1 tbsp, minced fresh ginger
- 2 cloves, minced garlic
- 3 tbsp fresh lemon juice
- 1/2 cup low-sodium chicken broth
- 1/2 tsp dried thyme
- 1/4 tsp sea salt
- 1 tbsp, chopped fresh dill
Instructions
- Step 1: Pat chicken breasts dry with paper towels. Season both sides with 1/4 tsp sea salt. Heat 2 tbsp avocado oil in a large skillet over medium-high heat until shimmering.
- Step 2: Add chicken breasts and cook undisturbed for 5-6 minutes per side until golden brown and internal temperature reaches 165°F (74°C). Remove chicken and set aside.
- Step 3: Reduce heat to medium. Add 1 tbsp minced fresh ginger and 2 minced garlic cloves to the skillet, cooking for 1 minute until fragrant. Stir in 3 tbsp fresh lemon juice, 1/2 cup low-sodium chicken broth, and 1/2 tsp dried thyme. Bring to a simmer and cook for 3 minutes to reduce slightly.
- Step 4: Return chicken to the skillet, coating evenly with sauce. Cook for 2 more minutes to reheat. Stir in 1 tbsp chopped fresh dill, then serve immediately.
