Pineapple-Cilantro Glazed Pork Shoulder

  1. Step 1: Pat the pork shoulder (2 lbs, trimmed of excess fat) dry with paper towels. Heat 1 tbsp olive oil in a large Dutch oven over medium-high heat. Sear the pork on all sides for 5 minutes per side until golden brown, then transfer to a plate.
  2. Step 2: Add the minced garlic (3 cloves) to the Dutch oven and cook for 1 minute until fragrant. Stir in the pineapple chunks (1 cup, fresh or canned), lime juice (2 tbsp), soy sauce (1 tbsp), and brown sugar (1 tbsp).
  3. Step 3: Return the pork to the Dutch oven, cover, and reduce heat to low. Simmer gently for 2 hours, turning the pork once halfway through, until fork-tender.
  4. Step 4: Remove the pork from the Dutch oven and let rest for 10 minutes. Strain the sauce, discarding any solids, and return to the pot. Simmer uncovered for 10 minutes until thickened.
  5. Step 5: Stir in the chopped cilantro (1/4 cup) and pour the sauce over the sliced pork. Serve immediately.
