Pineapple-Ginger Glazed Pork Tenderloin

Ingredients
- 1.5 lb pork tenderloin
- 1/2 cup pineapple juice
- 1/4 cup honey
- 2 tbsp, minced fresh ginger
- 2 tbsp soy sauce
- 1 tbsp rice vinegar
- 1 clove, minced garlic
- 1/4 tsp red pepper flakes
- 2 tbsp sesame oil
- 1/4 cup, chopped green onions
Instructions
- Step 1: Preheat oven to 400°F and place 1.5 lb pork tenderloin on a parchment-lined baking sheet.
- Step 2: In a bowl, whisk together 1/2 cup pineapple juice, 1/4 cup honey, 2 tbsp minced ginger, 2 tbsp soy sauce, 1 tbsp rice vinegar, 1 minced garlic clove, and 1/4 tsp red pepper flakes.
- Step 3: Brush half the glaze over the pork, then bake for 25 minutes. Baste with remaining glaze every 10 minutes until internal temperature reaches 145°F.
- Step 4: Remove from oven, let rest 5 minutes, then slice and garnish with 1/4 cup chopped green onions.
