Príosún Beef Stew
A hearty beef stew with carrots, onions, and potatoes, simmered to perfection for a comforting meal.

Ingredients
- 1.5 lbs beef chuck
- 2 tbsp all-purpose flour
- 1 tsp salt
- 1/2 tsp black pepper
- 2 tbsp olive oil
- 1 large onion
- 2 carrots
- 2 potatoes
- 4 cups beef broth
- 1 cup canned diced tomatoes
- 2 tbsp tomato paste
- 1 tsp dried thyme
Instructions
- Step 1: Pat 1.5 lbs beef chuck cubes dry and season with 2 tbsp all-purpose flour, 1 tsp salt, and 1/2 tsp black pepper. Heat 2 tbsp olive oil in a large Dutch oven over medium-high heat. Brown beef in batches for 3-4 minutes per batch, then set aside.
- Step 2: Add 1 chopped onion to the pot and cook for 5 minutes until translucent. Stir in 2 sliced carrots, 2 diced potatoes, 4 cups beef broth, 1 cup canned diced tomatoes, 2 tbsp tomato paste, and 1 tsp dried thyme. Return browned beef to the pot.
- Step 3: Bring to a simmer, reduce heat to low, cover, and cook for 1.5 hours until beef is tender and vegetables are cooked through.
