- 1 lb chicken thighs
- 1 lemon
- 2 tbsp olive oil
- 1 tsp dried thyme
- 2 cloves garlic
Instructions
- Step 1: Pat 1 lb bone-in, skin-on chicken thighs dry with paper towels. Season both sides with 1 tsp dried thyme and a pinch of salt.
- Step 2: Heat 2 tbsp olive oil in a large oven-safe skillet over medium-high heat until shimmering. Place chicken thighs skin-side down and cook for 8 minutes until golden brown and skin is crisp.
- Step 3: Squeeze juice from 1 lemon (about 2 tbsp) into the skillet. Add 2 minced garlic cloves and cook for 1 minute until fragrant.
- Step 4: Transfer skillet to a preheated 375°F oven and bake for 20 minutes until chicken reaches 165°F internally. Rest for 5 minutes before serving.
