Prismatic Beetroot Soup

Ingredients
- 2 medium beetroot
- 2 cups vegetable broth
- 1 apple
- 1 tbsp lemon juice
- 1 tbsp chopped fresh chives
- 1 tsp white miso paste
Instructions
- Step 1: Peel and dice 2 medium beetroot into 1/2-inch cubes, then simmer in 2 cups vegetable broth for 20 minutes until very tender.
- Step 2: Blend cooked beets and broth with 1 peeled, cored, and diced apple until completely smooth using an immersion blender.
- Step 3: Return soup to a saucepan, add 1 tbsp lemon juice, and warm over low heat for 3 minutes without boiling.
- Step 4: Stir in 1 tsp white miso paste until dissolved, then remove from heat.
- Step 5: Ladle into bowls, garnish with 1 tbsp chopped fresh chives, and serve immediately for optimal color clarity.
