Provençal Fish Stew with Saffron

Ingredients
- 1.5 lbs mixed white fish
- 1 medium, finely diced onion
- 2 cloves, minced garlic
- 1/4 cup olive oil
- 1 cup dry white wine
- 4 cups fish stock
- 1/2 cup diced tomatoes
- 1/2 tsp saffron threads
- 1/4 cup, chopped fresh parsley
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Step 1: Heat 1/4 cup olive oil in a large pot over medium heat. Add 1 medium finely diced onion and 2 minced garlic cloves, sautéing for 3 minutes until soft and fragrant.
- Step 2: Add 1.5 lbs mixed white fish pieces (cut into 1-inch pieces) and cook for 2 minutes, turning once, until lightly browned on the surface.
- Step 3: Pour in 1 cup dry white wine and 4 cups fish stock, then add 1/2 cup diced tomatoes and 1/2 tsp saffron threads. Bring to a simmer and cook uncovered for 15 minutes.
- Step 4: Season with 1/2 teaspoon salt and 1/4 teaspoon black pepper, then stir in 1/4 cup chopped fresh parsley. Cook for 2 more minutes until the fish is opaque and flakes easily.
