Quick Fresh Veggie Stir-Fry with Ginger Soy

Ingredients
- 2 cups broccoli florets
- 1 cup thinly sliced carrots
- 1 cup sliced bell peppers
- 2 minced garlic cloves
- 1 tbsp grated fresh ginger
- 3 tbsp soy sauce
- 1 tbsp rice vinegar
- 1 tsp sesame oil
- 1 tbsp sesame seeds
- 2 tbsp vegetable oil
Instructions
- Step 1: Heat vegetable oil in a wok or large skillet over high heat until shimmering. Add broccoli and carrots; stir-fry for 4 minutes until crisp-tender.
- Step 2: Add bell peppers, 2 minced garlic cloves, and 1 tbsp grated ginger; cook for 2 more minutes until vegetables are bright and slightly charred.
- Step 3: Whisk soy sauce, rice vinegar, and 1 tsp sesame oil in a small bowl. Pour over vegetables and toss to coat evenly.
- Step 4: Cook for 1 minute more, then sprinkle with sesame seeds. Remove from heat immediately to prevent overcooking.
