Quick Sesame-Ginger Tofu Stir-Fry with Snap Peas

Ingredients
- 14 oz, pressed and cut into 1-inch cubes firm tofu
- 3 tbsp soy sauce
- 1 tbsp rice vinegar
- 1 tsp sesame oil
- 1 tbsp grated ginger
- 2 cloves minced garlic
- 1 tsp maple syrup
- 1 tsp cornstarch
- 2 cups, trimmed snap peas
- 1 cup broccoli florets
- 1 tbsp vegetable oil
Instructions
- Step 1: Whisk together 3 tbsp soy sauce, 1 tbsp rice vinegar, 1 tsp sesame oil, 1 tbsp grated ginger, 2 minced garlic cloves, and 1 tsp maple syrup in a small bowl. Mix 1 tsp cornstarch with 2 tbsp cold water and stir into the sauce.
- Step 2: Heat 1 tbsp vegetable oil in a large skillet or wok over medium-high until shimmering. Add tofu cubes in a single layer and cook for 4 minutes per side until golden brown and crisp. Transfer to a plate.
- Step 3: Add snap peas and broccoli florets to the skillet. Stir-fry for 3 minutes until crisp-tender and bright green.
- Step 4: Return tofu to the skillet. Pour sauce over everything and stir constantly for 2 minutes until sauce thickens and coats ingredients evenly. Serve immediately over rice.
