Quick Vegetable Stir-Fry with Tofu

Ingredients
- 8 ounces pressed and cubed firm tofu
- 1 tablespoon sesame oil
- 3 tablespoons soy sauce
- 1 tablespoon rice vinegar
- 1 cup julienned carrots
- 1.5 cups broccoli florets
- 1 cup sliced bell peppers
- 2 cloves minced garlic
- 1 teaspoon grated ginger
- 1 teaspoon cornstarch
Instructions
- Step 1: Whisk together 3 tablespoons soy sauce, 1 tablespoon rice vinegar, and 1 teaspoon cornstarch in a small bowl. Heat 1 tablespoon sesame oil in a wok or large skillet over high heat until smoking.
- Step 2: Add 8 ounces pressed and cubed firm tofu. Sear for 2 minutes per side until golden. Remove tofu and set aside. Add 1 cup julienned carrots, 1.5 cups broccoli florets, and 1 cup sliced bell peppers to the skillet. Stir-fry for 3 minutes until vegetables are crisp-tender.
- Step 3: Add 2 minced garlic cloves and 1 teaspoon grated ginger. Stir-fry for 30 seconds until fragrant. Return tofu to the skillet, pour in the soy sauce mixture, and cook for 1-2 minutes until sauce thickens and coats all ingredients.
