Rainbow Swirl Pancakes with Berry Compote

- 1 cup all-purpose flour
- 2 tsp baking powder
- 1/4 tsp salt
- 1 tbsp sugar
- 1 cup milk
- 1 large egg
- 2 tbsp melted butter
- 1/4 cup mashed ripe banana
- 1/4 cup natural food coloring (red, yellow, blue)
- 1 cup mixed berries
- 1 tbsp honey
- 1/4 cup water
Instructions
- Step 1: In a large bowl, whisk together 1 cup all-purpose flour, 2 tsp baking powder, 1/4 tsp salt, and 1 tbsp sugar. In a separate bowl, beat 1 large egg, 1 cup milk, 2 tbsp melted butter, and 1/4 cup mashed ripe banana until smooth.
- Step 2: Gradually stir the wet ingredients into the dry until just combined, then divide the batter evenly into three portions (about 1/3 cup each).
- Step 3: Add 1/4 cup natural food coloring (red) to the first portion, 1/4 cup (yellow) to the second, and 1/4 cup (blue) to the third, stirring gently until each portion is uniformly colored but still slightly streaked.
- Step 4: Heat a non-stick skillet over medium heat. Lightly grease with cooking spray. Pour 1/4 cup of each colored batter onto the skillet, swirling them together gently to create a rainbow effect.
- Step 5: Cook for 2-3 minutes until bubbles form on the surface, then flip and cook for 1-2 more minutes until golden. Transfer to a plate and keep warm. Repeat with remaining batter.
- Step 6: While pancakes cook, combine 1 cup mixed berries, 1 tbsp honey, and 1/4 cup water in a small saucepan. Bring to a simmer over medium heat and cook for 5-7 minutes until the berries break down and the mixture thickens slightly, stirring occasionally.
