Raspberry-Mint Infused Cooler

A light and refreshing non-alcoholic drink with the sweet-tart taste of raspberries and a hint of mint, great for summer parties.

  1. Step 1: In a small bowl, muddle 1 cup fresh raspberries and 1/4 cup fresh mint leaves with 1/4 cup honey until the berries release their juice and the mint is fragrant, about 2 minutes.
  2. Step 2: Add 1/2 cup water to the muddled mixture and stir until the honey dissolves, about 1 minute.
  3. Step 3: Strain the mixture through a fine-mesh sieve into a large pitcher, pressing gently on the solids to extract all the liquid.
  4. Step 4: Add 4 cups sparkling water and 1/2 cup fresh lime juice, then stir gently. Refrigerate for 2 hours to infuse, then serve over 1/4 cup ice cubes.
