Raspberry Vanilla Panna Cotta

Ingredients
- 1 cup heavy cream
- 1/2 cup whole milk
- 1/4 cup sugar
- 1 tsp vanilla extract
- 1 packet (1/4 oz) gelatin
- 2 tbsp cold water
- 1 cup, fresh raspberries
- 2 tbsp sugar
- 1/2 tsp lemon juice
Instructions
- Step 1: In a small bowl, sprinkle 1 packet gelatin over 2 tbsp cold water and let sit for 5 minutes.
- Step 2: Heat 1 cup heavy cream and 1/2 cup whole milk in a saucepan over medium heat until hot but not boiling (about 5 minutes), then remove from heat.
- Step 3: Stir in 1/4 cup sugar and 1 tsp vanilla extract until dissolved. Whisk in the softened gelatin mixture until fully dissolved.
- Step 4: Pour the mixture into 4 ramekins and chill in the refrigerator for at least 4 hours until set.
- Step 5: For the sauce, combine 1 cup fresh raspberries, 2 tbsp sugar, and 1/2 tsp lemon juice in a blender until smooth, then strain through a fine-mesh sieve.
