Regional Sales Director's Herb-Roasted Potatoes

Ingredients
- 2 lbs baby potatoes
- 3 tbsp olive oil
- 4 cloves garlic
- 2 tbsp fresh rosemary
- 2 tbsp fresh thyme
- 1 tsp salt
- 1/2 tsp black pepper
Instructions
- Step 1: Preheat oven to 400°F. Cut 2 lbs baby potatoes in half lengthwise if large.
- Step 2: In a large bowl, toss potatoes with 3 tbsp olive oil, 4 minced garlic cloves, 2 tbsp fresh rosemary, and 2 tbsp fresh thyme.
- Step 3: Season with 1 tsp salt and 1/2 tsp black pepper, mixing until evenly coated.
- Step 4: Spread potatoes in a single layer on a parchment-lined baking sheet, cut-side down.
- Step 5: Roast for 35-40 minutes, flipping halfway through, until golden brown and crispy on the outside.
- Step 6: Remove from oven and let cool for 5 minutes before serving to allow potatoes to crisp further.
