  1. Step 1: Cut 2 cups mixed vegetables (broccoli, bell peppers, snap peas) into uniform 1-inch pieces. Mince 1 tbsp fresh ginger.
  2. Step 2: Heat a wok over high heat until smoking. Add 1 tbsp sesame oil and swirl to coat.
  3. Step 3: Add vegetables and stir-fry for 3 minutes until crisp-tender. Push to edges of wok.
  4. Step 4: Add minced ginger and stir for 15 seconds until aromatic. Pour in 2 tbsp soy sauce and 1 tsp rice vinegar, tossing constantly for 1 minute until vegetables are glossy and evenly coated.
