Rhubarb and Orange Crumble Topping

  1. Step 1: Preheat oven to 375°F (190°C). Cut rhubarb into 1/2-inch pieces and place in a 9x9-inch baking dish. Zest and juice the orange over the rhubarb; add 1/4 cup sugar and 2 tbsp flour.
  2. Step 2: Stir to combine, then bake for 10 minutes while preparing the crumble.
  3. Step 3: In a bowl, mix oats, 1/4 cup flour, cinnamon, and remaining 1/2 cup sugar. Cut in 4 tbsp cold butter using a pastry cutter until crumbly and pea-sized.
  4. Step 4: Sprinkle crumble mixture evenly over the hot rhubarb. Bake uncovered for 25-30 minutes until the top is golden and the filling bubbles around the edges.
