- 1 ripe avocado
- 2 ounces dark chocolate (85% cocoa)
- 1/2 teaspoon stevia sweetener
- 2 tablespoons almond milk
- 1/2 teaspoon pure vanilla extract
Instructions
- Step 1: Chop 2 ounces dark chocolate into small pieces. Melt in a double boiler over simmering water or in a microwave (heating in 20-second intervals, stirring between each).
- Step 2: In a food processor, combine 1 ripe avocado (pitted and peeled), melted dark chocolate, 1/2 teaspoon stevia, 2 tablespoons almond milk, and 1/2 teaspoon pure vanilla extract.
- Step 3: Blend on high for 1-2 minutes until completely smooth and creamy, scraping down the sides as needed.
- Step 4: Divide the mixture into 2 small ramekins or glasses. Refrigerate for at least 2 hours to set.
- Step 5: Serve chilled, optionally garnished with dark chocolate shavings or fresh berries.
