Root Vegetable and Ground Beef Stew

- 1.2 lbs ground beef
- 2 medium, diced carrots
- 2 medium, diced parsnips
- 2 stalks, diced celery
- 3 cloves, minced garlic
- 2 tbsp tomato paste
- 2 cups beef broth
- 1 tsp thyme
- 1/2 tsp rosemary
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp olive oil
Instructions
- Step 1: Heat 1 tbsp olive oil in a large pot over medium-high heat. Add 1.2 lbs ground beef and cook for 5-7 minutes, breaking into small crumbles until no longer pink.
- Step 2: Add 2 diced medium carrots, 2 diced medium parsnips, and 2 diced celery stalks, then cook for 5 minutes, stirring occasionally.
- Step 3: Stir in 3 minced garlic cloves and 2 tbsp tomato paste, cooking for 1 minute until fragrant.
- Step 4: Add 2 cups beef broth, 1 tsp thyme, 1/2 tsp rosemary, 1/2 tsp salt, and 1/4 tsp black pepper. Bring to a simmer, cover, and cook for 25-30 minutes until vegetables are tender.
