Rosemary and Thyme Flatbread with Roasted Cherry Tomatoes
A simple flatbread topped with fresh herbs and sweet roasted cherry tomatoes, perfect for a light meal or appetizer.

Ingredients
- 1 cup (120g) all-purpose flour
- 1/2 tsp salt
- 1/4 cup (60ml) olive oil
- 3 tbsp, finely chopped fresh rosemary
- 1.5 tbsp, finely chopped fresh thyme
- 1 cup (150g) cherry tomatoes
- 1/4 tsp black pepper
- 1/2 cup (50g) grated Parmesan cheese
Instructions
- Step 1: Preheat oven to 400°F (200°C). Toss 1 cup cherry tomatoes, 1 tbsp olive oil, 1/4 tsp salt, and 1/4 tsp black pepper on a baking sheet; roast for 15 minutes until blistered and tender.
- Step 2: In a bowl, combine 1 cup all-purpose flour, 1/2 tsp salt, 3 tbsp fresh rosemary, and 1.5 tbsp fresh thyme. Gradually add 1/4 cup water and 1 tbsp olive oil; knead for 5 minutes until smooth dough forms. Rest for 10 minutes.
- Step 3: Roll the rested dough into a 12-inch circle on a floured surface. Brush with 1 tbsp olive oil and sprinkle with 1/2 cup grated Parmesan cheese.
- Step 4: Bake on a preheated pizza stone for 12-15 minutes until golden and crisp.
- Step 5: Top the hot flatbread with roasted cherry tomatoes and sprinkle with remaining 1/2 tbsp fresh rosemary and 1/2 tbsp fresh thyme.
