Rosemary-Garlic Chicken Thighs with Roasted Asparagus

Ingredients
- 4 bone-in, skin-on chicken thighs
- 2 tablespoons olive oil
- 2 cloves, minced garlic
- 1 teaspoon, dried rosemary
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1 bunch, trimmed and cut into 2-inch pieces asparagus
Instructions
- Step 1: Preheat oven to 400°F (200°C). Pat 4 bone-in, skin-on chicken thighs dry with paper towels and season with 1/2 teaspoon salt, 1/4 teaspoon pepper, and 1 teaspoon dried rosemary.
- Step 2: Heat 2 tablespoons olive oil in a large oven-safe skillet over medium-high heat until shimmering. Add the chicken thighs skin-side down and cook for 5 minutes until the skin is golden brown and crispy.
- Step 3: Flip the chicken and add 2 minced garlic cloves to the skillet. Cook for 1 minute until fragrant, then transfer the skillet to the oven.
- Step 4: Roast for 20 minutes, then add 1 bunch trimmed asparagus to the skillet around the chicken. Continue roasting for 5-7 minutes until the chicken reaches an internal temperature of 165°F (74°C) and the asparagus is tender with slight char.
