Ingredients
- 8 oz Bone-in chicken thighs
- 1 tsp Fresh rosemary
- 2 Garlic cloves
- 1/4 Lemon
- 1 tbsp Olive oil
- 1/4 tsp Kosher salt
- 1/8 tsp Black pepper
Instructions
- Step 1: Preheat oven to 400°F (200°C). Pat 8 oz bone-in chicken thighs dry with paper towels and season with 1/4 tsp kosher salt and 1/8 tsp black pepper.
- Step 2: Finely chop 1 tsp fresh rosemary and mince 2 garlic cloves, then mix with 1 tbsp olive oil and 1/4 lemon zest (zest only).
- Step 3: Rub the herb mixture evenly over chicken thighs, pressing gently to adhere.
- Step 4: Place thighs skin-side up on a parchment-lined baking sheet and roast for 25-30 minutes until skin is golden and internal temperature reaches 165°F (74°C).
