Rosemary-Garlic Roasted Cod with Lemon

Ingredients
- 4 (6 oz each) cod fillets
- 2 tbsp olive oil
- 3 cloves, minced garlic
- 1 tbsp, chopped fresh rosemary
- 2, sliced lemon
- 2 cups, sliced zucchini
- 1, sliced red bell pepper
- 1 tbsp olive oil
- 1/2 tsp salt
Instructions
- Step 1: Preheat oven to 400°F. Pat 4 cod fillets dry and place on a parchment-lined baking sheet.
- Step 2: Rub each fillet with 2 tbsp olive oil, 3 minced garlic cloves, 1 tbsp chopped rosemary, and 1/2 tsp salt. Arrange 2 lemon slices on top of each fillet.
- Step 3: Toss 2 cups sliced zucchini and 1 sliced red bell pepper with 1 tbsp olive oil, 1/4 tsp salt, and 1/4 tsp black pepper. Spread around the cod on the baking sheet.
- Step 4: Roast for 15-18 minutes until cod is opaque and flakes easily with a fork, and vegetables are tender-crisp.
- Step 5: Remove from oven and let rest for 3 minutes. Serve cod with vegetables, drizzling pan juices over the top.
