Rosemary-Garlic Roasted Cod with Lemon

  1. Step 1: Preheat oven to 400°F. Pat 4 cod fillets dry and place on a parchment-lined baking sheet.
  2. Step 2: Rub each fillet with 2 tbsp olive oil, 3 minced garlic cloves, 1 tbsp chopped rosemary, and 1/2 tsp salt. Arrange 2 lemon slices on top of each fillet.
  3. Step 3: Toss 2 cups sliced zucchini and 1 sliced red bell pepper with 1 tbsp olive oil, 1/4 tsp salt, and 1/4 tsp black pepper. Spread around the cod on the baking sheet.
  4. Step 4: Roast for 15-18 minutes until cod is opaque and flakes easily with a fork, and vegetables are tender-crisp.
  5. Step 5: Remove from oven and let rest for 3 minutes. Serve cod with vegetables, drizzling pan juices over the top.
