Rosemary-Glazed Chicken with Sweet Potato Mash

Ingredients
- 2 (6 oz each), boneless and skinless chicken breasts
- 2 medium (1 lb total), peeled and cubed sweet potatoes
- 1 tsp, finely chopped rosemary
- 2 cloves, minced garlic
- 2 tbsp olive oil
- 1/2, juiced lemon
- 2 tbsp, finely chopped chives
Instructions
- Step 1: Preheat oven to 400°F. Toss 2 chicken breasts with 1 tbsp olive oil, 1 tsp chopped rosemary, 2 minced garlic cloves, 1/4 tsp salt, and 1/4 tsp black pepper. Place on a baking sheet and roast for 20-22 minutes until internal temperature reaches 165°F.
- Step 2: While chicken cooks, boil 2 peeled and cubed sweet potatoes in salted water for 15-18 minutes until fork-tender. Drain and mash with 1 tbsp olive oil, 1/4 tsp salt, and 1/2 tbsp lemon juice until smooth.
- Step 3: Slice chicken and serve topped with sweet potato mash, drizzled with remaining lemon juice and sprinkled with 2 tbsp chopped chives and 1/2 tsp extra rosemary.
