Rum-Soaked Coconut Panna Cotta with Mango Coulis

Ingredients
- 1 cup Heavy cream
- 1/2 cup Whole milk
- 1 oz Spiced rum
- 2 tsp Unflavored gelatin
- 1/4 cup Granulated sugar
- 1 cup pureed Mango
- 1/2 tsp Lime juice
- 1 tbsp Sliced almonds
Instructions
- Step 1: Bloom 2 tsp unflavored gelatin in 2 tbsp cold water for 5 minutes, then microwave for 10 seconds to dissolve.
- Step 2: Heat 1 cup heavy cream and 1/2 cup whole milk in a saucepan over medium heat until steaming but not boiling, then whisk in 1/4 cup granulated sugar until dissolved.
- Step 3: Remove from heat, stir in 1 oz spiced rum and dissolved gelatin, pour into ramekins, and refrigerate for 4 hours until set.
