Runway Vegetable Stir-Fry
A vibrant mix of colorful vegetables stir-fried to perfection with a light soy-ginger sauce.

Ingredients
- 2 tbsp vegetable oil
- 2 cups, cut into florets broccoli
- 1, sliced bell pepper
- 1, julienned carrot
- 2 cloves, minced garlic
- 1 tbsp, minced ginger
- 3 tbsp soy sauce
- 1 tbsp rice vinegar
- 1 tsp sugar
- 1 tsp sesame oil
Instructions
- Step 1: Heat 2 tbsp vegetable oil in a large skillet over high heat. Add 2 cups broccoli florets and stir-fry for 3 minutes until crisp-tender.
- Step 2: Add 1 sliced bell pepper and 1 julienned carrot, and stir-fry for 2 more minutes.
- Step 3: Add 2 minced garlic cloves and 1 tbsp minced ginger, and stir-fry for 1 minute until fragrant.
- Step 4: In a small bowl, whisk together 3 tbsp soy sauce, 1 tbsp rice vinegar, and 1 tsp sugar. Pour over the vegetables and stir to coat evenly.
- Step 5: Cook for 1 minute, then remove from heat and drizzle with 1 tsp sesame oil.
