- 4 whole wheat tortillas
- 1/2 cup shredded cheddar
Instructions
- Step 1: Whisk eggs with 1/4 tsp salt and 1/2 tsp cumin in a bowl; heat 1 tsp oil in a nonstick skillet over medium heat.
- Step 2: Pour in eggs, stirring gently until softly set (3-4 minutes), then stir in black beans and corn.
