Saffron-Infused Fettuccine with Lemon and Peas

Ingredients
- 8 oz fettuccine pasta
- 1/4 tsp saffron threads
- 1 medium lemon
- 1 cup fresh peas
- 2 cloves garlic
- 3 tbsp extra virgin olive oil
- 1/2 cup grated Parmesan cheese
- 1/2 tsp kosher salt
- 2 tbsp fresh basil
Instructions
- Step 1: Bring a large pot of salted water to a boil. Add 8 oz fettuccine and cook for 8 minutes until al dente, then drain and reserve 1/2 cup pasta water.
- Step 2: While pasta cooks, place 1/4 tsp saffron threads in a small bowl and pour 2 tbsp hot pasta water over them. Let steep for 5 minutes.
- Step 3: Heat 3 tbsp olive oil in a large skillet over medium heat. Add 2 minced garlic cloves and cook for 1 minute until fragrant but not browned.
- Step 4: Add drained fettuccine, 1/2 cup reserved pasta water, and saffron mixture to skillet. Toss for 2 minutes until sauce thickens and coats pasta.
- Step 5: Stir in 1 cup fresh peas, zest of 1 lemon, and 2 tbsp chopped fresh basil. Cook for 2 more minutes until peas are tender.
- Step 6: Remove from heat, stir in 1/2 cup grated Parmesan, and season with 1/2 tsp kosher salt. Serve immediately.
