Saffron-Infused Linguine with Cherry Tomatoes and Shrimp

Ingredients
- 8 oz linguine
- 1 cup, halved cherry tomatoes
- 6 oz, peeled and deveined shrimp
- 1/4 tsp saffron threads
- 2 cloves, minced garlic
- 3 tbsp extra virgin olive oil
- 2 tbsp, chopped fresh parsley
- 1 tsp lemon zest
Instructions
- Step 1: Bring a large pot of salted water to a rolling boil. Add linguine and cook for 8-10 minutes until al dente. Reserve 1/2 cup pasta water before draining.
- Step 2: While pasta cooks, heat 2 tbsp olive oil in a large skillet over medium heat. Add saffron threads and stir for 1 minute until fragrant.
- Step 3: Add garlic and cook for 30 seconds until aromatic, then add cherry tomatoes. Sauté for 4 minutes until tomatoes begin to soften and release juices.
- Step 4: Add shrimp to skillet and cook for 2-3 minutes per side until pink and opaque. Remove shrimp and tomatoes from skillet.
- Step 5: Add drained linguine to skillet with 2 tbsp reserved pasta water. Toss vigorously for 1 minute until pasta is coated. Stir in tomatoes, shrimp, lemon zest, and parsley. Add more pasta water if needed to create a light sauce.
